IGP, Indicazione Geografica Tipica (Typical Geographic Indication), is a classification system recognized by the European Union authenticating the unique qualities of gourmet food products based on their geographic region of origin. Also known as Emmer wheat (triticum dicoccon), Farro is an ancient Italian grain with a firm, chewy texture that's similar to spelt. With a nutty flavor and texture and a low gluten content, Farro has been gaining popularity amongst gastronomes in Italy and America. Great as a side dish, salad condiment or an alternative to potatoes or rice. Simply boil farro in salted water for a couple minutes, drain and add fresh tomatoes, extra virgin olive oil and fresh herbs. Garnish with grated Grana cheese.
